VEGETABLE CASSEROLE WITH CHEESE
SAUCE
 
1 sm. cauliflower, pulled apart, or 1 (10 oz.) package frozen cauliflower, cooked
1 lb. fresh, or 1 (10 oz.) pkg. frozen lima beans, cooked
4 carrots, scraped and slivered with potato peeler
3 tbsp. butter
3 tbsp. flour
Salt and lots of freshly ground black pepper
1 1/2 c. milk
2/3 c. grated cheddar cheese

Put cooked cauliflower and lima beans in a shallow buttered casserole with the slivered raw carrots. Melt butter and blend in flour. Cook a few minutes, add seasoning and milk slowly, and stir until smooth and thickened. Add cheese and stir until melted. Pour over the vegetables and put in 350 degree oven about 30 to 35 minutes or until the sauce is brown and bubbling. Serves 4.
