BRAISED BEEF BALLS 
1 1/4 lbs. ground beef
1 sm. onion, grated
1 egg, beaten
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
2 tbsp. prepared horseradish
2 tbsp. bacon drippings

Mix beef with onion, egg, and the seasonings. Shape into 7 or 8 balls and brown slowly in a heavy skillet containing hot drippings. Add 1/4 cup water, cover, and simmer about 35 minutes, or until meat is done. Add more liquid, if needed, to prevent pan going dry.

Thicken remaining liquid in skillet after meat is removed with 2 tablespoons flour blended in 1/4 cup water. Add enough water or milk to make 1 1/4 cups gravy. 5 servings.
