FILLING: 1/2 c. sugar 2 c. cut up dates 1/2 c. water Boil until thick; set aside and cool. If too thick, add 1/4 cup more water. Stir often as it sticks. COOKIE DOUGH: 1/2 c. brown sugar 1/2 c. white sugar 1 egg 1/2 c. butter 1 3/4 c. flour 1 tsp. baking soda 1 tsp. vanilla 1/4 c. nuts Mix butter, sugar, egg and vanilla. Sift flour, soda and salt together, then add to butter mixture. Divide dough in half; refrigerate. Let stand overnight. Easier to handle. Roll out dough and spread date filling over, then roll up like cinnamon rolls in aluminum foil. Let chill for several hours. Slice and bake until lightly brown. Bake at 350 degrees for about 10 minutes. |
