PUMPKIN BARS 
1 c. shortening
1 tsp. vanilla
1 1/3 c. brown sugar
2 eggs
1 c. pumpkin
2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. allspice
1 c. nuts
1 c. coconut or 1 c. raisins

Cream shortening and vanilla; add sugar gradually, then eggs and pumpkin. Beat well. Sift dry ingredients and stir into pumpkin mixture. Add nuts and raisins or coconut.

Bake in a greased rimmed cookie sheet for 30-35 minutes at 350 degrees. Frost with Cream Cheese Frosting when cool. Makes about 32 bars.

CREAM CHEESE FROSTING:

1 stick butter
8 oz. cream cheese
1 tsp. vanilla
1 lb. powdered sugar

Mix in usual way.
