POTATOES VINAIGRETTE | |
2 1/2 lb. red potatoes 1/3 c. finely chopped parsley 1 sm. onion 1 tbsp. Dijon mustard 1 tsp. salt 1/4 tsp. pepper 3/4-1 tarragon leaf 1-2 cloves garlic 1/2 c. white wine vinegar 2/3 c. olive or salad oil Steam or boil potatoes; let stand 10 minutes. With skin on cut into 3/8 inch slices. Add parsley and onions. Blend together mustard, salt, pepper, tarragon, garlic, vinegar and oil. Pour over warm potatoes. Gently toss to coat. Let stand at least 3 hours. Chill if desired. |
