STUFFED POTATOES 
12 med. sized potatoes
1 tsp. lard
Salt to taste
Cream cheese
Tomato sauce, optional
1 egg

Peel and boil the potatoes until they are tender, then mash. Add lard, slightly beaten egg and salt. Mix well and form into balls about the size of golf balls. Stuff cream cheese into the center of the balls, then mash them flat. Place them on a greased skillet, fry until brown on both sides. Stuff potatoes are often served with a tomato sauce over them. They go well with slices of avocado and/or fried eggs.
