ROAST PORK CARIBBEAN STYLE 
Seasoning for a 5 pound pork roast:

1 med. clove of garlic, peeled
4 peppercorns or 1/4 tsp. ground pepper
1 tsp. oregano
1 1/2 tbsp. olive oil
1 tsp. salt for each pound of meat
1 tsp. vinegar
1 tbsp. orange juice

With a mortar or in food processor, pound or mix together garlic, pepper and oregano. Add remaining ingredients. Make small cuts in pork and rub seasoning over surface of pork. Bake at 350 degrees for 30 minutes per pound.
