FROZEN FRUIT CUPS | |
2 (16 oz.) cans peaches (in own juice) 2 (16 oz.) cans apricots 1 lb. thawed, unsweetened strawberries 3 to 4 bananas, slightly mashed Fructose or honey to taste (optional) 1 c. chopped nuts (optional) Combine peaches, apricots, and strawberries in large pan (include liquid from cans of fruit). Mash with wire masher. Mixture should be of a chunky-pulpy consistency. Add bananas and nuts. Stir to mix well. Pour mixture into lined cup cake tins. Freeze. When thoroughly frozen, store in zip-lock bags or Tupperware until ready to serve. Will keep several weeks. Thaw 10 to 15 minutes or until slightly softened, before serving. You can vary the flavor by increasing or decreasing fruits or by adding other fruits. Can also be frozen in sheet pan and served sliced. |
