COCONUT MACAROONS 
1/2 c. egg whites
1/4 tsp. salt
1 1/2 c. sugar
1/2 tsp. vanilla
2 1/2 c. coconut

Beat egg whites and salt until peaks form. Gradually add sugar until stiff peaks form. Fold in vanilla and coconut. Drop 2 inches apart on cookie sheet covered with brown paper (cut paper bag). Bake at 325 degrees for 20 minutes. Cool slightly before removing. Makes 2 1/2 dozen.
