GERMAN RICE PUDDING 
1/2 c. rice (not instant)
2 c. boiling water
3 c. milk
1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla
Cinnamon

Cook rice in water, do not drain, add milk and simmer 20 minutes. Add sugar, salt, continue simmering until creamy, don't give up. It can take a long time. Remove from heat and add vanilla, sprinkle with cinnamon. I add a couple of well-beaten eggs for the last 10 or 15 minutes of cooking. Like it better that way.
