PUMPKIN COOKIES 
4 c. flour
2 c. oatmeal
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. butter
2 c. brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla
1 (16 oz.) can solid pack pumpkin
1 c. chocolate chips

Combine dry ingredients. Cream butter, sugar, egg and vanilla. Alternate additions of dry ingredients and pumpkin. Stir in chocolate chips. Drop 1/4 cup dough onto lightly greased cookie sheet. Bake at 350 degrees for 20 to 25 minutes until firm and lightly browned. Frost with Cream Cheese or Peanut Butter Frosting. May substitute 1 cup raisins for chocolate chips.

To make "pumpkin" cookies, form dough into a pumpkin shape, add a little dab for the stem. Decorate frosted cookie with assorted candies, nuts, raisins, etc.
