CHINESE FRIED RICE 
2 garlic cloves, minced
1/4 c. soy sauce
2 tbsp. vegetable oil
1 lb. beef or pork, cut in thin strips
4 slices boiled ham, cut in strips
4 c. cooked rice
1/2 c. diced onion
1/2 lb. shrimp
2 eggs, lightly beaten
3 tbsp. oil

Marinate beef or pork in first 3 ingredients for 1 hour. Heat 3 tablespoons oil in skillet or wok. Add ham. Stir fry 1 minute. Drain meat. Stir fry until cooked. Add rice. Stir fry 3 minutes. Add onions, shrimp, 2 to 3 tablespoons of the marinade. Cook 5 minutes. Add eggs. Cook 2 to 3 minutes, stirring constantly. Serve immediately.
