BRAN BREAD
2 (1/4 oz.) pkg. dry yeast
1 c. water (110-115 degrees)
1/2 tsp. sugar
1 c. Uncle Sam's cereal
1 c. Puritan oil
1/2 c. molasses
1 c. boiling water
1 tsp. salt
1/4 tsp. ground cloves
1/4 tsp. allspice
2 eggs, slightly beaten
4 1/2 c. all purpose flour
1-2 c. flour

In large bowl, mix bran, oil, boiling water, salt, spices, and eggs, then the bubbling yeast. I use the two-step system - soft sponge with first flour. Let rise to double in bulk, then add the additional flour or enough to make a firm product. Knead and make into loaves. Let rise again. Bake at 350 degrees for 30-35 minutes.

(You can find Uncle Sam's own cereal shelf at South BiLo.) Makes good toast and freezes well. Makes 3-4 loaves, depending on the size of the loaf tins.
