LENTILS AND CHEESE 
1 lb. lentils
1 med. onion, diced
2 tbsp. butter
1/2 c. grated cheddar cheese, divided

Simmer lentils in enough water to cover until soft. Mash. Saute onion in butter. Mix onion, butter and 1/4 cup cheese into lentils; season. Put into greased baking dish and cover with cheese. Bake at 350 degrees until brown.
