CHICKEN ENCHILADAS 
2 lbs. chicken (cooked and chopped
1 med. onion, chopped
1/2 green pepper, chopped
1 tomato, chopped
2 cans mild enchilada sauce
3 pkg. corn tortillas
1 pkg. Colby cheese
1 pkg. Monterey Jack cheese
2 (8 oz.) cream cheese

Mix chicken, onions, green peppers, and tomato with cream cheese. Add 1/4 can enchilada sauce.

Soften tortillas in microwave, pour 3/4 can sauce in bottom of cake pan. Fill tortillas and roll. Place them in line in a cake pan. Cover with remaining sauce and grated cheese. Cook in 350 degree oven for 20 minutes or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
