CHICKEN ENCHILADAS | |
2 lbs. chicken (cooked and chopped 1 med. onion, chopped 1/2 green pepper, chopped 1 tomato, chopped 2 cans mild enchilada sauce 3 pkg. corn tortillas 1 pkg. Colby cheese 1 pkg. Monterey Jack cheese 2 (8 oz.) cream cheese Mix chicken, onions, green peppers, and tomato with cream cheese. Add 1/4 can enchilada sauce. Soften tortillas in microwave, pour 3/4 can sauce in bottom of cake pan. Fill tortillas and roll. Place them in line in a cake pan. Cover with remaining sauce and grated cheese. Cook in 350 degree oven for 20 minutes or until cheese is melted. |
