BROCCOLI & RICE CASSEROLE 
3 c. cooked rice
3 pkgs. frozen chopped broccoli
1 med. onion, chopped
1 1/2 cans cream of chicken soup
3/4 c. whole milk
4 oz. grated cheddar cheese

Place rice in bottom of 13"x9" Pyrex dish. Saute the broccoli and onion together until the broccoli is thawed. Place over rice. Mix soup, milk and cheese and pour over broccoli and rice. Bake at 350 degrees for 30 minutes. Serves 12 to 15.

Variation: Use 8 ounce jar Cheez Whiz and mushroom soup instead of cheddar cheese and chicken soup.
