PORK CHOPS AND APPLE 
4 thick pork chops, about 2 1/2 lbs.
1/4 c. light brown sugar
1/2 tsp. salt
1/4 white pepper
1/2 grated orange rind
1/2 tsp. allspice
2 med. cooking apples, cored, unpeeled, slice in rings
1 lg. onion, slice in rings

Trim fat from pork chops. Mix brown sugar, salt, pepper, orange rind and allspice in bowl and coat pork chops with spiced mixture. Stand upright in loaf pan. Alternate slices of apples and onions between chops. Cover with foil. Cook in 325 degree oven until chops are done.
