BREAD SALAD (FAHTOOSH) 
3 c. toasted Syrian bread, cut into 1 1/2 inch pieces
3 med. cucumbers, peeled and diced
2 med. tomatoes
1 white onion or scallions
1 c. parsley, chopped
1/4 c. mint, chopped or dried
1/2 c. lemon juice (more, if needed)
1/2 c. oil (any kind)
Salt and pepper to taste

Put toasted bread into large salad bowl. Add all vegetables in layers. Mix well with lemon juice and oil. Add seasoning. Adjust salt, lemon, and oil to taste.
