LEMON HOLLANDAISE SAUCE 
4 tbsp. mayonnaise
2 tbsp. lemon juice
3 tbsp. butter
1 egg yolk
Dash cayenne pepper
Dash salt

Over low heat, combine mayonnaise, lemon juice and butter. Stir until shortening is melted and mixture is blended. Add egg yolk immediately, stirring quickly to incorporate yolk into mayonnaise mixture. Continue cooking over low heat until mixture thickens. Add seasonings and stir.
