DESSERT FRUIT CREAM PIE | |
8 oz. tofu 2 c. raw fruit: persimmons, apricots, peaches in season 1/2 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. cinnamon 1/2 c. malt or maple syrup 1 (8 inch) pie crust, unbaked Mix all ingredients in blender. Fill pie crust with uncooked filling. Bake for 10 minutes at 425 degrees. Then lower to 350 degrees for 1 hour or until knife comes out clean. VARIATIONS: 1. Two cups cooked pumpkin or sweet squash. Proceed as above. 2. 1/2 cup raisins, 2 cups apples, sliced. Place in crust. Add 2 tablespoons apple juice to other ingredients. Pour over fruit and bake. |
