DALE'S CARROT CAKE 
1 c. of sifted flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. of sguar
3/4 c. of shortening or oil
4 eggs
1 tsp. vanilla
8 to 10 med. carrots
3/4 c. of chopped walnuts or pecans

Sift together baking powder, soda, salt, and cinnamon, add sguar, oil, eggs, and vanilla. Mix well. Add grated carrots to batter, with nuts. Turn batter into greased. 10 inch tube pan. Bake one hour at 350 degrees. Cool 10 minutes, turn on rack. Cool, serve with or without icing.

LEMON CREME ICING:

2 c. confectioners sugar
1/4 c. of soft butter
2 tbsp. fresh lemon juice
2 tsp. grated lemon rind

Blend and spread on cake.
