CAN'T BEAT IT! - CARROT CAKE 
2 c. sugar
2 c. flour
1 1/2 c. oil
1 tsp. salt
2 tsp. cinnamon
3 c. carrots, grated
6 eggs
1 1/2 c. nuts, chopped (optional)
2 tsp. baking soda
1 tsp. vanilla

Cream sugar, flour, oil, salt, cinnamon, carrots and eggs. Beat for 2 minutes. Add nuts (optional), baking soda and vanilla. Put in a greased and floured 9 x 13-inch pan. Bake at 350 degrees for 45 minutes.

Add cream cheese frosting when cooled.
