SHEPHERDS PIE 
1 lb. ground beef
1 med. chopped onion
1 egg
1/2 tsp. salt
1/2 tsp. pepper (opt.)
1 c. peas
1 c. carrots

DUTCH POTATO FILLING:

6 potatoes
1 tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper (opt.)
1 c. bread crumbs
1 med. onion, chopped
Celery leaves, cut fine

Mix first five ingredients then lightly brown in skillet. Transfer to 1 1/2 quart casserole. Add peas and carrots. Peel and cook potatoes until soft. Drain and mash. Add the remaining ingredients and enough milk to make consistency of mashed potatoes. Cover the casserole ingredients with this "Dutch Potato Filling". Bake in 350 degree oven until brown.
