EASY FRUITCAKE | |
1 1/2 c. raisins 1 tsp. salt 2 c. sugar 5 tbsp. shortening 1 c. chopped walnuts 1 tsp. baking soda 1 tsp. cloves 8 oz. dates, cut up (1 1/2 c.) 2 c. boiling water 3 c. all-purpose flour (sifted) 2 tsp. cinnamon 1 c. chopped mixed candied fruit In a large saucepan combine raisins, dates, sugar, water and shortening; mix well. Bring to boil, reduce heat and simmer gently 20 minutes. Remove from heat and cool. Lightly grease two 8 x 4 1/2 x 2 3/4 loaf pans. Line bottoms of pans with greased brown paper. Preheat oven to 325 degrees. Sift flour with baking soda, cinnamon, cloves and salt. Add to cooled raisin mix, along with walnuts and fruit. Mix with wooden spoon. Turn into pans and bake 1 1/2 hours or until done. Cool in pans. |
