CRACKLING CORNBREAD 
1 c. self-rising cornmeal
1 c. self-rising flour
2 eggs
1 c. buttermilk
1/2 c. water
1/4 c. oil
1 c. cracklings

Mix all ingredients well. Stir in cracklings. Pour into a well greased cast-iron skillet. Bake at 450 degrees for 20-25 minutes.
