6 to 8 chicken breasts 2 to 3 lbs. smoked sausage, cut up 2 c. chopped onions 2 c. reg. rice, uncooked Salt Pepper 2 tbsp. oil Serve with hot rolls and sweet pickles Boil chicken in water to cover and salt until cooked, about 30 to 45 minutes. Cook and stir sausage pieces and onions in the oil until onions are clear. Add in large cooking pot the sausage and onions, salt and pepper to taste, chicken breasts (boned and in chunks), uncooked rice, and chicken broth with water to make 4 cups. Bring mixture to boil; lower heat and let simmer without stirring until rice is cooked, about 1 hour. |
