CHICKEN PINON 
Boneless chicken breast (pound thin)
Stemmed spinach
Sun-dried tomatoes in oil

Roll inside of breast. Wrap in Saran Wrap. Steam 3/4 way done. Finish in oven (after unwrapped).

Pesto cream
Basil
1 c. Parmesan cheese
2 tbsp. pinon nuts
2 cloves garlic

Blend basil, nuts, garlic and Parmesan cheese in blender or food processor. Finish with 1/2 cup soft, whole butter or olive oil. Add to reduced heavy cream. Serve with chicken and toasted pinon nuts.
