CHICKEN FRIED RICE 
1 c. diced chicken
1 tbsp. soy sauce
1/2 tsp. salt
1/2 c. shortening
1 c. uncooked rice
2 1/2 tsp. instant chicken bouillon granules
2 1/2 c. hot water
1 sm. onion, sliced
1/4 c. green pepper
1/4 c. celery
2 eggs, beaten
1 c. shredded lettuce

Combine chicken, soy sauce, and salt. Let stand 15 minutes. Melt shortening in skillet. Add rice. Cook until golden brown. Add chicken mixture, bouillon and hot water. Cover. Cook 20-25 minutes. Add onion, green pepper, and celery. Cook uncovered until liquid is absorbed. Push rice to side and add eggs. Cook until almost set. Stir in rice. Stir in lettuce. Serve.
