CHICKEN FRIED RICE 
1 c. rice, uncooked
1 tbsp. butter
1 c. cooked, diced chicken
2 c. water
2 chicken bouillon cubes
1/2 c. diced celery
1/2 c. diced onions
2 eggs
1 c. shredded lettuce

Brown rice in pan with butter. Add water, bouillon, and chicken. Cook over low heat until rice is tender and water is evaporated. Add celery and onions.

Scramble eggs and add to rice mixture. Remove from heat, stir in lettuce and serve.
