CHICKEN AND BLACK BEAN SALAD 
2 boneless chicken breasts, grilled or sauteed & diced
1 c. black beans, cooked & drained
1 sm. red onion, diced
1 red bell pepper, diced
2 tomatoes, peeled, seeded & diced
1/4 c. cilantro, chopped
6 corn tortillas, julienned & deep fried
1/3 c. olive oil
1/4 c. red wine vinegar
3 cloves garlic, chopped

Mix all ingredients. Marinate for a couple of hours and season to taste. Serves 4 to 6.
