ORIENTAL MEATBALLS | |
1 1/2 lbs. ground beef 1 can chunk pineapple 1 c. diced celery 1 green pepper, cut in chunks 1 lg. onion, peeled and diced 1/2 c. pineapple juice 1/2 c. vinegar 1 c. sugar 1/2 tsp. salt 2 tsp. soy sauce 1/4 tsp. pepper 1/2 tsp. ginger 2 tsp. cornstarch with 1 tsp. cold water Season meat, roll in balls. Brown pineapple and vegetables in 2 tablespoons oil - remove from pan - brown and partially cook meatballs. Combine vinegar, sugar, 1/2 cup pineapple juice and seasoning. Add to meatballs; then add pineapple and vegetables; continue cooking on low heat until meat is done. Dissolve cornstarch in cold water, add to meatball mixture - cook until sauce thickens and is clear. Serve with rice. |
