RICE AND BROCCOLI CASSEROLE 
1 med. onion
2 cloves garlic
2 stalks celery, diced
1 stick butter
1 c. rice
2 c. water
1 bo bouillon cube, (chicken)
1 bunch broccoli, cut into florets and parboiled
1 can cream of mushroom soup
1 can water
1 (8 oz.) pkg. shredded Mozzarella cheese

Saute onion, garlic and celery in butter. Set aside. Cook rice and bouillon cube in 2 cups water for 5 minutes. Mix drained broccoli, rice mix (drained), sauteed mix, mushroom soup and 1 can water. Stir in Mozzarella cheese. Pour all into buttered casserole. Bake at 350 degrees for 45 minutes covered. Uncover and bake 15 minutes more.
