SAVORY RICE, BROCCOLI AND CHEESE
BAKE
 
2 tbsp. butter
1/2 c. chopped onion
1 clove minced garlic
1 1/2 c. cooked rice
1 (10 oz.) frozen broccoli (well drained)
1 c. shredded Jack
1 c. shredded Cheddar
3 eggs
1/3 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme

Saute' butter, onion and garlic in skillet until soft. Remove from heat. Combine onion, with rice, broccoli, Jack and 1/2 cup Cheddar. Place in buttered 13 x 9 x 2 casserole. Combine eggs, milk, salt, pepper and thyme. Pour over rice mixture. Top with remaining 1/2 cup Cheddar. Bake in 350 degree oven for 40 minutes or until egg is set. Serves 6 to 8.
