CHICKEN/TURKEY SALAD 
1 1/2 c. diced, cooked chicken or turkey meat
3 c. cooked rice or elbow macaroni
1 green pepper, diced (opt.)
1 med. onion
1 c. celery, diced (opt.)
1-2 grated carrots
1 c. mayonnaise
1-2 cooked peas (opt.)

Combine meat, rice, green pepper, onion, celery, carrots and peas. Toss with mayonnaise. Serve salad garnished with sliced, boiled eggs or tomato wedges and crackers or sprinkle with peanuts.
