Mocha Surprise Pudding 
1 1/2 T instant coffee in 3/4 c. hot water
3/4 c. sugar mixed with 2 tbsp. cocoa

Flour Mixture:

1 c. flour
3/4 sugar
2 tsp. Baking powder
1/4 tsp. salt
1/2 tbsp. cocoa

Liquid Mixture:

1/2 c. milk
1 tsp. vanilla
2 1/2 tbsp. butter

Add liquid mixture to flour mixture. Put into greased bowl. Sprinkle cocoa/sugar over. Slowly pour on coffee (do not mix).

Bake at 350°F about 40 min. Serve warm. Cover individual servings with ice cream or whipped cream.
