BLENDER ZUCCHINI SOUP 
5 slices bacon
3 lbs. zucchini, sliced
1 lg. onion, chopped
At least 3 tbsp. chopped fresh basil (2 1/2 tsp. dried)
1-2 cloves garlic
5 c. chicken broth (can be 1/2 water & 1/2 broth)
Salt & pepper to taste

Our favorite every summer using our zucchini from the garden.

Cook bacon until crisp in a 6 to 8 quart pan, pour off drippings. In same pan add zucchini, onion, basil, garlic and broth. Bring to boil and simmer 15 minutes.
