STRAWBERRY PIE 
8 oz. softened cream cheese
1/3 c. sugar
2 tbsp. lemon juice
1 tsp. vanilla
2 tbsp. grated lemon rind
Strawberries (lots)
2 tbsp. cognac or brandy

Make a regular or graham cracker pie crust. Cook to brown. Beat cream cheese, sugar, vanilla, lemon juice and rind together and pour into pie shell. Slice strawberries, add 2 tablespoons liqueur. Let sit awhile to juice up. Spoon berries atop shell. Chill.
