FRENCH COCONUT PIES 
1/4 c. buttermilk
1 c. coconut
1 1/3 c. sugar
1 (9") pie shell, unbaked
1/2 stick butter, warm
3 eggs
1 tsp. vanilla

Beat eggs until fluffy. Add sugar, vanilla, milk, butter and coconut. Mix well and put in pie shell. Bake for 10 minutes at 450 degrees for 40 minutes or until toothpick comes out clean.
