PORK WITH ZUCCHINI 
2 lbs. lean pork, cut in 1 inch cubes
1 tbsp. oil
1 c. chopped onion
2 cloves garlic, minced
4 zucchini, sliced
2 cans Ro-Tel tomatoes, chopped
1 can corn, whole kernel
1/4 tsp. salt
1/2 tsp. pepper

Brown meat in large skillet. Push meat on sides, add onion and garlic and zucchini. Cook until tender. Add tomatoes, corn, salt and pepper. Mix well. Cover; bring to a boil. Reduce heat, cook until meat is tender.
