PASTA SALAD 
1 lb. rigatoni
1 sm. red onion soaked 1/2 hour in cold water
2 cloves garlic
1/2 c. olive oil
Salt and pepper to taste
Basil and arugula, fresh

Mix and refrigerate ingredients #2-5 for 1 hour. Cook rigatoni as directed. Place rigatoni and several bunches of arugula. Pour on oil mixture. Then top with basil.
