PASTA A'LA CAPRESE 
12 plum tomatoes, diced (about 5 c.)
4 cloves garlic, minced
1 sweet banana pepper, diced
1 tbsp. basil, dried
1/2 c. olive oil
1 tsp. salt
Ground pepper to taste
1 lb. ziti or rigatoni
8 oz. Mozzarella cheese, cubed
Freshly grated Parmesan to taste

In large mixing bowl combine tomatoes, garlic, banana pepper, basil, oil, salt and pepper. Cover. Allow to stand at room temperature for at least 90 minutes. Cook pasta until just tender. Drain. Toss pasta with sauce and Mozzarella and serve immediately with Parmesan cheese.
