3 3/4 - 4 lb. chicken, cut up 1/4 c. lemon juice 1 tbsp. curry powder 1/2 tsp. soy sauce 1/3 c. Dijon mustard 1/3 c. honey 2 med. scallions, sliced thinly Wash and dry chicken; arrange skin side up in an oblong baking dish, about 13" x 9" x 2". Whisk together lemon juice, curry powder and soy sauce, then whisk in mustard and honey until blended; pour over chicken. Bake, uncovered in a preheated 350 degree oven. Baste several times until browned and tender. Sprinkle with scallions. Serve with rice. Makes 4 servings. |
