GREEN TOMATO PICKLES | |
7 lbs. tomatoes, sliced 2 c. lime 2 ga. water Soak in lime water for 24 hours. Drain and soak for 4 hours in fresh water. Change water every hour. Drain again. SYRUP: 8 c. vinegar 8 c. sugar 1 tbsp. salt 2 tbsp. pickling spice, tied in bag Combine and bring to a slow boil. Stir until sugar is dissolved. Pour over tomatoes and soak overnight. Boil for 35 minutes to an hour until tomatoes are done. Put in jars. |
