GREEN TOMATO PICKLES 
7 lb. sliced green tomatoes
2 gallons water
3 c. lime
5 lb. sugar
3 pts. vinegar
1 tsp. each of ground ginger, allspice, cloves, mace, cinnamon and celery seed

Soak tomatoes for 24 hours in the water and lime. Drain and soak in fresh water for 4 hours, changing water every hour. Place sugar and vinegar in pot. Tie spices in cheesecloth and put in vinegar and sugar mixture.

Bring to boil and pour over tomatoes and let stand overnight. Boil for 1 hour the next morning and pack in jars and seal.
