SWISS BROCCOLI SOUP 
1/4 c. butter
1/4 c. all purpose flour
1 tsp. salt
1/4 tsp. pepper
3 1/2 c. milk
6 oz. pkg. shredded Swiss cheese
10 oz. pkg. frozen chopped broccoli
1/2 c. water

In 3 quart sauce pan over medium heat, melt butter. Add flour, 1/2 teaspoon of the salt and pepper. Cook and stir for 1 minute. Add milk, stirring, and bring to a boil until thickened. Remove from heat. Stir in cheese, cover and set aside. Stir occasionally until cheese is melted and mixture is smooth. In 2 quart pan over medium- high heat, bring broccoli, water and remaining salt to a boil. Break broccoli apart with fork. Reduce heat to low, cover and simmer for 5 to 6 minutes or until tender. Stir cooked broccoli with liquid into cheese sauce. Re-heat if necessary over low heat.
