SPECIAL OCCASION CHICKEN SALAD 
4 chicken breasts, skinned
1/4 tsp. garlic powder
1/4 tsp. onion powder
2 chicken bouillon cubes (or 2 tsp. unsalted bouillon)

Place chicken, spices, bouillon into a heavy pot. Fill pan with enough water to cover chicken. Bring to boil; cover and simmer 60 to 70 minutes, or until chicken is tender. When chicken is done, separate broth and meat. Refrigerate until cool. When chicken is cool, add the remaining ingredients. 1/4 c. light mayonnaise 1/4 c. fat-free mayonnaise 1/2 tsp. prepared mustard 1/4 c. celery, finely chopped 1/4 c. onion, finely minced 1/8 tsp. white pepper 1/4 c. pickle relish 1/3 c. cashews (unsalted)

Mix all ingredients thoroughly and chill for at least 2 hours. Makes 4 servings.
