ESCAROLE SOUP 
4 links of Italian sausage (sweet or hot)
Olive oil
1 sm. can tomato sauce
1 head of escarole
Salt
Pepper
Basil
1 can Progresso Cannellinni Beans

In heavy pan brown sausage in olive oil - cut into small pieces while cooking. Add tomato sauce. Wash escarole; break into small pieces. Add to sausage mixture. Cover, cook until tender. Add beans and juice to pan; heat thoroughly. Add salt, pepper, basil, and season to taste.
