PUMPKIN FRITTERS 
2 c. pumpkin puree
1 c. flour
1 tsp. vanilla
1/2 tsp. salt
3 eggs
2/3 c. sugar
1 tsp. nutmeg

In a heavy skillet, heat 1/4 inch butter until hot. Drop mixture by tablespoons and cook until browned on both sides. Powder with confectioners' sugar.
