MOM'S TURKEY SOUP 
Turkey bones (saved from Thanksgiving dinner)
1 bunch celery, diced
8-12 carrots, diced
2 onions, quartered
Rice or pearl barley
1 sm. can tomato sauce

Cover the turkey bones with water (just barely). Simmer for 4 hours. After one hour toss in the onion, 2 or 3 carrots and the tops of the celery stalks complete with leaves.

After 4 hours strain the broth. Throw out the cooked carrots, celery and onion and any meat.

To the broth add the second onion and the rest of the carrots and celery.
