MOM'S TURKEY TETRAZZINI | |
8 oz. spaghetti or noodles 1 tbsp. salt 3 qt. boiling water 1/4 c. butter 1/4 c.flour 1 1/2 c. milk 1 c. water 2 chicken bouillon cubes 1/8 tsp. pepper 1/8 tsp. cayenne 1/2 c. plain yogurt (or sour cream) 1 (4 1/2 oz.) jar mushrooms 4 tbsp. Parmesan cheese 2 c. diced, cooked turkey or chicken Parsley for garnish Cook noodles in salted water until tender; drain. Meanwhile in medium pan melt butter; blend in flour until smooth. Stir in milk, water, bouillon cubes, pepper and cayenne. Cook over medium heat, stirring constantly until mixture thickens and boils. Stir a little sauce into yogurt; return to saucepan. Mix in mushrooms with liquid and 1/2 of Parmesan cheese. Combine with noodles and turkey. Turn into lightly greased 9"x12" baking dish. Sprinkle with remaining cheese. Bake at 425 degrees for 15 minutes or until hot. Garnish with parsley. |
